Can I use a top round roast in place of beef stew meat?
I want to make a beer braised beef recipe, the recipe has bacon garlic onion beer a bay leaf and calls for 2 pounds cubed beef stew meat and I am wondering if I can cube a top round roast and use it in place of the stew meat, the method of cooking will be in a slow cooker on low for 6 hrs.
Oh, yes. Round roast come from the skeletal muscles of the beef (those which are used to support or move the animal). As such, it is among the more flavorful, if somewhat tougher cuts of meat.
Round roast is ideal for braising, which is essentially what you are doing in a slow cooker.
You might want to give it a little more than 6 hours on low, but with slow cooking, it’s not all that critical. If you make 1″ cubes, I would suggest 6 or 7 hours.
But for best flavor, I would brown the cubed beef in a pan before putting into the slow cooker. This will help caramelize the meat, giving it a more intense and satisfying flavor.
