FROSTINGS
If I asked you about frostings, you probably would say “Frostings are Yummy!”
You know making the right kind of frostings is perhaps the most important aspect of baking a cake, as these are the first things that people taste when they take the first bite.
However, most people do not know that some frostings are cooked, yes that’s right cooked! A cooked frosting is the secret that some chefs use to make frostings which turn light and fluffy – sp if you’re wondering how to do this then your search ends here.
Before I go on to tell you how to make those delicious cooked frostings, I need to answer one question that I am often asked “But why is it important to make frostings at home, when these can be bought at any store?” The main reason for making frostings at home is that home-made frostings are not as sweet as the store bought products and children love the taste, especially when you use them on cup cakes.
So here are a couple of quick and easy recipes to make cooked frostings at home.
Recipe 1 –
1 1/4 cups of sugar
4 tablespoons cocoa – sifted
4 tablespoons cornstarch – sifted
1 1/4 cups boiling water
1 teaspoon Salt
1 tablespoon butter
1 teaspoon vanilla.
In a medium size pan, mix together the sugar, cocoa and cornstarch for a minute. Add salt and water to the mixture. Cook on high heat till the mixture thickens. Add butter and vanilla to the thickened mixture, after taking it from the heat. Stir the ingredients well. Allow the mixture to cool down till such times that it is ready to use.
Please note: only use this frosting on a cooled cake.
Recipe 2 -
1 cup sugar
1 teaspoon vanilla
3 tablespoons flour – sifted
1 cup butter
1 cup vitamin D whole milk (too runny if you use other)
Cook flour and milk in double boiler until thick, stirring constantly. Cool WELL. Next step cream sugar, butter and vanilla until as fluffy as possible. Now blend the mixtures together.
This icing must stay refrigerated as it will fall apart at room temperature – therefore once you have frosted a WELL COOLED CAKE, it must be kept in the fridge.
Please note to avoid any formation of skin on the mixtures while they are being cooled place some wax paper top of the mixture.
These recipes for cooked frostings can be considered enough to cover a two-layered cake or one large square or round.
Now all it takes is for you to go ahead and cook your home-made frostings – as this can be one of the simplest ways to impress your kids and guests!
